Creamy and Flavorful Malai Tawa Boti – Malai tawa boti is a mouth-watering dish that combines a wealth of cream with the fragrant flavors of spices and soft chicken pieces. This dish, often enjoyed as an appetizer or main course, is cooked on a flat tawa (tawa), ensuring the perfect combination of creamy texture and grilled perfection. Ideal for festive occasions, family gatherings, or a special dinner, Malai Tawa Boti is a real delight for the senses.

Ingredients:

  • 1kg boneless and skinless chicken breasts or thighs, cut into bite-size pieces
  • 3-4 green chilies
  • 6-7 garlic cloves
  • 3 inches ginger
  • 1/2 cup Greek yogurt
  • 1/2 cup double cream
  • 3 tablespoons lemon juice
  • 2 teaspoons salt
  • 2 teaspoons cumin powder
  • 1 teaspoon coriander powder – 1 % teaspoons white pepper – 2 tablespoons cooking oil
  • 1/4 cup mozzarella cheese
  • 1 live charcoal

Instructions:

A] Prepare the chicken:

  1. In a bowl, place boneless chicken pieces with salt, cumin powder, coriander powder, white chillies, freshly ground ginger, garlic and green chillies.
  2. Add Greek yogurt, double cream and lemon juice to marination.
  3. Mix all the ingredients well and leave the chicken to marinate overnight for a better taste.

B] Cook the chicken:

  1. Heat a skillet and add cooking oil. Next, add marinated chicken to the skillet.
  2. Cook the chicken initially on low heat to avoid sticking to the bottom of the skillet.
  3. Once the chicken starts to bubble, increase the heat more and cook until most of the moisture is gone, and the chicken softens.
  4. Add mozzarella cheese to the chicken, cover the skillet, and let the cheese melt.
  5. For an optional step, broil the dish at 190°C for 5 minutes to get a golden layer on top.
  6. Smoke with live coal for 5-6 minutes for a smoky flavor.

C] Finish and serve:

Once the chicken is cooked and has a beautiful golden brown color, remove it from the tawa. Decorate with fresh coriander leaves and serve with lemon leaves. Malai tawa booti pairs perfectly with naan, paratha, or an aspect of fresh salad.
