Bihari Booti Kebab is a tasty and fragrant kebab that belongs to the Bihari cuisine of Pakistan. Ingredients:
- 2 kg boneless beef/lamb/mutton – 1/2 cup yogurt
- 1 tbsp ginger paste
- 1 tbsp garlic paste
- 1 tbsp green chili paste
- 1/2 cup papaya paste
- Salt to taste
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1 tsp red chili powder
- 1/2 tsp citric acid
- 1 tsp garam masala
- 1/2 tsp ground black pepper – 1/4 tsp ground nutmeg
- 1/4 tsp ground mace
- 1/2 tsp turmeric
- 2 tbsp lemon juice
- 2 tbsp mustard oil
- 2 onions, thinly sliced and fried until golden brown, then dried and powdered
- Skewers for grilling
Instructions:
A] Marinate the Meat:
- Cut boneless meat into thin, small bite-sized pieces.
- Mix curd, papaya paste, ginger paste, garlic paste and green chilli paste in a large mixing bowl. Mix well.
- Add salt, cumin powder, coriander powder, red chilli powder, citric acid, garam masala, ground black pepper, ground black pepper, ground mace, turmeric, lemon juice and mustard oil to the marinade mixture. Mix everything well.
- Add the fried and powdered onions to the marinade mixture and mix until well combined.
- Add the chopped meat to the marinade and mix well to make sure the meat is well coated. Cover the bowl and let it stay in the fridge overnight to prepare the taste.
B] Prepare the Skewers:
Soak the wood skewers in water for 30 minutes to prevent them from burning. If using a metal skewer, there is no need to soak. Tie the pieces of meat with thread on the skewers, leaving a little space between each piece even for cooking.
C] Grill the Kebabs:
Preheat grill to medium-high heat. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the meat is cooked through and a good char on the outside. Paste with extra mustard oil or ghee during grilling for extra flavour.
D] Finish and Serve:
After cooking the kebabs, remove them from the grill and let them rest for a few minutes. Decorate with fresh coriander leaves and serve with lemon leaves. Bihari boti kebab combines well with naan, paratha, or mint chutney and a side of the salad.
